ANZAC Biscuits with Almonds
ANZAC biscuits were originally made by wives and mothers and sent to soldiers serving overseas during World War I.

Preheat the oven to 160°C (320°F). Line a baking tray with parchment paper.

In a large mixing bowl, combine the rolled oats, flour, coconut, brown sugar, and chopped almonds.

In a small saucepan, melt the butter and golden syrup over low heat.

In a separate small bowl, dissolve the baking soda in boiling water, then add it to the melted butter mixture.

Pour the melted butter mixture into the dry ingredients and mix well until combined.

Take spoonfuls of the mixture and shape them into balls. Place them onto the prepared baking tray, leaving space between each biscuit.

Flatten each ball slightly with the back of a spoon.

Bake in the preheated oven for 12-15 minutes or until golden brown.

Remove from the oven and let the biscuits cool on the baking tray for 5 minutes.

Transfer the biscuits to a wire rack to cool completely.
