  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and cut out circles to fit your mini pie pans.
  3. In a saucepan, combine the cherries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat until thickened.
  4. Spoon the cherry filling into the pie crusts.
  5. Place another circle of pie crust on top and crimp the edges to seal.
  6. Brush the tops of the pies with beaten egg.
  7. Bake for 25 minutes or until golden brown.
  8. Allow to cool for 10 minutes before serving.
