  1. In a bowl, whisk together the all-purpose flour and ground almonds.
  2. In a separate large bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
  3. Add the egg yolks and vanilla extract to the butter mixture and mix well.
  4. Gradually add the flour mixture to the butter mixture and mix until the dough comes together.
  5. Divide the dough in half, shape each half into a disk, and wrap in plastic wrap. Refrigerate for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out one disk of dough on a lightly floured surface to about 1/8 inch (3mm) thickness.
  8. Use a round cookie cutter to cut out circles from the rolled dough and place them on the prepared baking sheets.
  9. Use a smaller round cookie cutter to cut out the centers from half of the circles.
  10. Bake the cookies for about 10-12 minutes, or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.
  12. Spread raspberry jam on the whole cookies and dust the cookies with the cut-out centers with powdered sugar.
  13. Place the cut-out cookies on top of the jam-covered cookies to create sandwich cookies.
