Rainier cherries are a type of sweet cherry that was developed in the 1950s at Washington State University. They are known for their yellow or blush-colored skin and exceptionally sweet flavor.

  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan.
  2. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix well.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  4. Spread the batter evenly into the prepared baking pan. Press the Rainier cherries into the batter, and sprinkle with chopped almonds.
  5. Bake for 25 minutes, or until the edges are golden brown. Remove from the oven and let cool in the pan for 30 minutes.
  6. Once cooled, dust with powdered sugar. Cut into bars and serve.
