Alfajores de Maizena
Alfajores de Maizena are traditional South American cookies filled with dulce de leche and often enjoyed with a cup of mate tea.

In a bowl, mix cornstarch and all-purpose flour.

In a separate bowl, cream butter and powdered sugar.

Add vanilla extract to the butter mixture and mix well.

Gradually add the cornstarch mixture to the butter mixture, mixing until dough forms.

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C).

Roll out the dough on a floured surface and cut out round cookie shapes.

Place the cookies on a baking sheet lined with parchment paper.

Bake for 10 minutes or until the edges are lightly golden.

Remove from the oven and let cool completely.

Spread dulce de leche on the bottom side of half the cookies.

Sandwich the cookies together, with the dulce de leche in the middle.

Roll the sides of the alfajores in shredded coconut.

Let the alfajores rest for at least 1 hour before serving.
