In a large pot, bring vegetable broth to a boil.

Meanwhile, prepare the wonton filling by combining finely chopped carrot, snow peas, bell pepper, mushrooms, green onion, ginger, garlic, soy sauce, sesame oil, salt, and black pepper in a bowl.

Take a wonton wrapper and place a small amount of filling in the center. Wet the edges of the wrapper with water and fold it in half, pressing to seal.

Repeat with remaining wrappers and filling.

Once the broth is boiling, carefully drop the wontons into the pot and cook for about 5-7 minutes, or until they float to the surface.

Add additional vegetables like sliced carrot, snow peas, bell pepper, and mushrooms to the pot and cook for another 5 minutes.

Season with salt and black pepper to taste.

Serve hot and garnish with chopped green onions.
