Chop the dark chocolate into small pieces.

In a saucepan, heat the heavy cream over medium heat until it starts to simmer.

Pour the hot cream over the chopped chocolate and let it sit for 1 minute.

Stir the mixture until the chocolate is completely melted and smooth.

Add the honey and vanilla extract to the chocolate mixture and stir until well combined.

Cover the bowl with plastic wrap and refrigerate for 1 hour.

Once the mixture is firm, use a spoon or a small cookie scoop to form small truffle balls.

Roll the truffles in cocoa powder, powdered sugar, or any desired coating.
