Bell peppers are an excellent source of vitamin C, containing more than twice the amount found in oranges.

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes.

In a bowl, whisk together the eggs, cheddar cheese, spinach, diced tomatoes, salt, and black pepper.

Heat olive oil in a skillet over medium heat and sauté the egg mixture until cooked.

Stuff the bell peppers with the cooked egg mixture.

Place the stuffed peppers on a baking sheet and bake for 20-25 minutes, or until the peppers are tender.
