Coffee cake is not typically made with coffee, but is instead a cake that is meant to be enjoyed with coffee.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

In a separate small bowl, dissolve the instant coffee granules in the milk.

Gradually add the dry ingredients to the butter mixture, alternating with the coffee-milk mixture, beginning and ending with the dry ingredients. Mix until just combined.

In a small bowl, mix together the brown sugar, cinnamon, and chopped nuts (if using).

Grease a 9-inch square baking pan and pour half of the batter into the pan. Sprinkle half of the brown sugar mixture over the batter. Pour the remaining batter over the brown sugar layer and sprinkle the remaining brown sugar mixture on top.

Cover the pan with plastic wrap and refrigerate overnight.

Preheat the oven to 350°F (175°C). Remove the plastic wrap from the pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Allow the coffee cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
