Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large mixing bowl, combine the homemade sourdough starter, all-purpose flour, granulated sugar, matcha powder, baking powder, and salt. Mix well.

Cut the unsalted butter into small pieces and add it to the bowl. Use your fingers or a pastry cutter to incorporate the butter into the dry ingredients until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the eggs and vanilla extract. Add the egg mixture to the dry ingredients and mix until a dough forms.

Fold in the almonds.

Transfer the dough onto the prepared baking sheet and shape it into a log, about 12 inches long and 4 inches wide.

Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.

Remove from the oven and let the biscotti log cool for 10 minutes. Reduce the oven temperature to 325°F (160°C).

Use a sharp knife to slice the log into 1-inch thick biscotti. Arrange the biscotti cut-side up on the baking sheet.

Bake for an additional 10 minutes, then flip the biscotti over and bake for another 10 minutes.
