In a separate pot, bring water to a gentle simmer. Crack eggs into separate small cups or bowls. Carefully slide eggs into the simmering water and poach for 3-4 minutes, until the whites are set but the yolks are still runny.

Use an immersion blender or regular blender to puree the soup until smooth.
