Smores Cookie Sandwiches
S’mores are a popular campfire treat in the United States, and these cookie sandwiches bring that classic flavor combination to a convenient handheld dessert.

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Roll the dough into 12 equal-sized balls and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand.

Bake for 8-10 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Once the cookies have cooled, spread marshmallow fluff on the bottom side of half of the cookies. Place a piece of milk chocolate on top of the fluff. Top with another cookie, bottom side down, to create a sandwich.
