Dip each marshmallow sandwich into the melted chocolate mixture, ensuring it is fully coated. Roll the chocolate-coated sandwich in desiccated coconut. Place the coated sandwiches on a wire rack to set for 30 minutes. In a separate bowl, mix icing sugar, milk, and vanilla extract to make the icing. Drizzle the icing over the set lamingtons. Allow the icing to set before serving.
