In a large bowl, dissolve yeast and sugar in warm water. Let it sit for 5 minutes.

Add flour and salt to the yeast mixture. Mix until a dough forms.

Knead the dough on a lightly floured surface for about 5 minutes.

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise for 1 hour or until doubled in size.

Preheat the oven to 425°F (220°C).

In a large pot, bring water and baking soda to a boil.

Divide the dough into small pieces and roll them into bite-sized balls.

Drop the dough balls into the boiling water and let them cook for 30 seconds.

Remove the dough balls from the water using a slotted spoon and place them on a greased baking sheet.

Melt the butter and brush it over the dough balls. Sprinkle coarse salt on top.

Bake in the preheated oven for 12-15 minutes or until golden brown.

Let the pretzel bites cool for a few minutes before serving.
