In a mixing bowl, combine the grated carrots, all-purpose flour, granulated sugar, baking powder, ground ginger, ground cinnamon, and salt.

In a separate bowl, cream together the unsalted butter, eggs, and vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.

Divide the batter evenly among the cupcake liners and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

While the cupcakes are baking, prepare the spiced cream cheese frosting. In a bowl, beat together the cream cheese, powdered sugar, ground nutmeg, and orange zest until smooth and creamy.
