Heat vegetable oil in a large pan or wok over medium heat. Add minced garlic and sauté until fragrant.

Add chopped onion, carrot, and frozen peas. Stir-fry until vegetables are tender.

Push the vegetables to one side of the pan and crack eggs into the empty space. Scramble the eggs until cooked.

Add cooked rice to the pan and stir-fry everything together.

Pour soy sauce over the rice and mix well. Season with salt and pepper.

Add chopped green onions and stir-fry for another minute.

Remove from heat and let it rest for 5 minutes before serving.
