Maple Walnut Buche de Noel
Buche de Noel, also known as Yule log, is a traditional Christmas dessert in France. It is named after the custom of burning a large log on Christmas Eve.

Preheat the oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.

In a mixing bowl, whisk together the cake flour, baking powder, and salt.

In a separate bowl, beat the eggs and granulated sugar until light and fluffy.

Gradually add the vegetable oil, maple syrup, and vanilla extract to the egg mixture, mixing well after each addition.

Fold in the dry ingredients until just combined, then fold in the chopped walnuts.

Pour the batter into the prepared jelly roll pan and spread it evenly.

Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.

Meanwhile, prepare a clean kitchen towel dusted with powdered sugar.

Once the cake is done, immediately invert it onto the prepared towel and remove the parchment paper.

Starting from one end, roll the cake tightly with the towel. Let it cool completely.

Unroll the cooled cake and spread the whipped cream evenly over the surface.

Gently roll the cake back up without the towel, starting from the same end as before.

Place the rolled cake on a serving platter and dust with a mixture of powdered sugar and cocoa powder.

Garnish with fresh berries and refrigerate for at least 2 hours before serving.
