Ingredients
  • 300 gram Zucchini
  • 300 gram Potato
  • 100 gram Onion
  • 2 unit Egg
  • 50 gram Flour
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 tablespoon Olive oil
  • 200 gram Greek yogurt
  • 100 gram Cucumber
  • 1 clove Garlic
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh dill
Instructions
  1. Grate the zucchini, potato, and onion. Squeeze out excess moisture.
  2. In a large bowl, combine the grated vegetables, eggs, flour, salt, and black pepper. Mix well.
  3. Heat olive oil in a frying pan over medium heat.
  4. Spoon the mixture into the pan, forming small pancakes. Cook for 3-4 minutes on each side, until golden brown.
  5. In a separate bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill to make tzatziki sauce.
  6. Serve the latkes hot with tzatziki sauce on the side.
