Ingredients
  • 2 cup Zucchini
  • 2 cup All-purpose flour
  • 1 cup Sugar
  • 1 cup Brown sugar
  • 1/2 cup Vegetable oil
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Walnuts (optional)
  • 1/2 cup Raisins (optional)
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large bowl, combine the zucchini, flour, sugar, brown sugar, oil, eggs, vanilla extract, cinnamon, baking powder, baking soda, and salt. Mix well.
  4. If desired, fold in walnuts and raisins.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes.
  8. Transfer to a wire rack and let it cool completely before slicing.
