  • 1.5 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoon Sugar
  • 1 cup Milk
  • 0.25 cup Vegetable oil
  • 1 large Egg
  • 1 medium Jalapeno pepper
  • 0.5 cup Cheddar cheese
  • 0.25 cup Green onions
Instructions
  1. Preheat the oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, combine the cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together the milk, vegetable oil, and egg.
  4. Finely chop the jalapeno pepper, removing the seeds for less heat if desired.
  5. Stir the chopped jalapeno, cheddar cheese, and green onions into the wet ingredients.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
