Ingredients
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 2 tablespoon Lemon zest
  • 2 tablespoon Fresh lemon juice
  • 0.5 cup Buttermilk
  • 0.5 cup Powdered sugar
  • 1 tablespoon Lemon juice
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the lemon zest and lemon juice.
  5. Alternate adding the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  9. In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Drizzle over the cooled loaf.
  10. Slice and serve.
