  • 1 cup Yellow cornmeal
  • 1 cup Gluten-free flour blend
  • 2 tablespoon Sugar
  • 2 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 Egg
  • 1 cup Milk
  • 1/4 cup Vegetable oil
Instructions
  1. Preheat oven to 400°F (200°C). Grease muffin tin or line with paper liners.
  2. In a large bowl, whisk together the yellow cornmeal, gluten-free flour blend, sugar, baking powder, and salt.
  3. In a separate bowl, beat the egg. Stir in the milk and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer to a wire rack to cool completely.
