Heat oil in a wok or large frying pan over medium heat.

Add garlic and ginger, sauté for a minute.

Add carrots, peas, and bell pepper, stir-fry for 3-4 minutes.

Push the vegetables to one side of the pan and pour beaten eggs on the other side. Scramble the eggs until cooked.

Add cooked rice to the pan and mix well with the vegetables and eggs.

Season with soy sauce, sesame oil, salt, and pepper. Stir-fry for another 2-3 minutes.

Garnish with chopped scallions and serve hot.
