  • 4 tablespoon Butter
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 1/4 cup All-purpose flour
  • 4 cup Chicken broth
  • 2 cup Milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 cup Cheddar cheese
  • 1 cup Monterey Jack cheese
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Parsley
Instructions
  1. In a large pot, melt the butter over medium heat. Add the onion, carrot, and celery. Cook until the vegetables are tender, about 5 minutes.
  2. Sprinkle the flour over the vegetables and stir to coat. Cook for 1 minute.
  3. Gradually whisk in the chicken broth and milk. Bring to a simmer and cook until thickened, about 10 minutes.
  4. Stir in the Dijon mustard, Worcestershire sauce, cheddar cheese, and Monterey Jack cheese. Cook until the cheese is melted and the soup is smooth.
  5. Season with salt and black pepper.
