Ingredients
  • 2 cup Wild rice
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 medium Celery stalks
  • 1 cup Dried cranberries
  • 1 cup Dried apricots
  • 1 cup Pecans
  • 0.5 cup Fresh parsley
  • 1 tablespoon Fresh thyme leaves
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Preheat the oven to 350°F (175°C). Cook the wild rice according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the onion and celery, and sauté until softened, about 5 minutes.
  3. Add the cooked wild rice, dried cranberries, dried apricots, pecans, parsley, thyme, salt, and black pepper to the skillet. Stir until well combined.
  4. Transfer the mixture to a baking dish and cover with foil. Bake for 30 minutes.
  5. Remove the foil and bake for an additional 10-15 minutes, or until the top is crispy and golden.
  6. Let the stuffing rest for 10 minutes before serving.
