Whole Wheat Berry Scones
Scones originated in Scotland and are traditionally served with clotted cream and jam as part of a cream tea.

Preheat the oven to 425°F (220°C).

In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, and salt.

Cut the cold unsalted butter into small cubes and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the honey, egg, vanilla extract, and milk.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Gently fold in the mixed berries.

Turn the dough out onto a lightly floured surface and knead it a few times until it comes together.

Pat the dough into a circle about 1 inch thick.

Cut the circle into 8 wedges.

Place the scones onto a baking sheet lined with parchment paper.

Bake for 15-20 minutes, or until the scones are golden brown.
