Ingredients
  • 8 slice Whole-grain bread
  • 2 cup Kale
  • 1/2 cup Dried cranberries
  • 1/2 cup Dried apricots
  • 1 medium Onion
  • 2 stalk Celery stalks
  • 1/2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/2 teaspoon Dried thyme
  • 1/2 teaspoon Dried sage
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Cut the whole-grain bread into cubes and spread them on a baking sheet. Bake for about 10 minutes or until they are crispy and golden.
  3. In a large skillet, heat olive oil over medium heat. Add the onion and celery, and cook until they are softened.
  4. Add the kale and cook for another 2-3 minutes until it wilts.
  5. In a large bowl, combine the toasted bread cubes, cooked vegetables, dried cranberries, dried apricots, dried thyme, dried sage, salt, and black pepper. Mix well.
  6. Gradually pour the vegetable broth over the mixture, stirring until it is evenly moistened.
  7. Transfer the mixture to a baking dish and cover it with foil. Bake for 30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the top is crispy.
  9. Let it rest for 10 minutes before serving.
