  1. Soak the rice noodles in warm water for 10 minutes. Drain and set aside.
  2. In a wok or large pan, heat the vegetable oil over medium heat. Add the garlic and stir-fry for 1 minute.
  3. Add the tofu and cook until lightly browned, about 3-4 minutes.
  4. Push the tofu to one side of the pan and crack the eggs into the other side. Scramble the eggs until cooked through.
  5. Add the carrots, bell peppers, and bean sprouts to the pan. Stir-fry for 2-3 minutes, until the vegetables are slightly tender.
  6. Add the soaked rice noodles to the pan, along with the soy sauce, tamarind paste, and brown sugar. Stir-fry for another 2-3 minutes, until the noodles are heated through.
  7. Remove from heat and squeeze lime juice over the noodles. Toss to combine.
  8. Serve the Veggie Pad Thai garnished with chopped peanuts, green onions, cilantro, and chili flakes.
