Ingredients
  • 800 gram Potatoes
  • 200 gram Carrots
  • 200 gram Peas
  • 150 gram Onion
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 cup Vegetable Stock
  • 2 tablespoon Butter
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Peel and chop the potatoes. Boil them in salted water until tender. Drain and mash with butter and salt.
  2. In a separate pan, heat olive oil and sauté onion and garlic until softened.
  3. Add carrots, peas, and vegetable stock. Cook until vegetables are tender.
  4. Preheat the oven to 200°C (400°F).
  5. In a baking dish, spread the vegetable mixture evenly. Top with mashed potatoes.
  6. Bake for 20-25 minutes or until the top is golden brown.
  7. Let it rest for 10 minutes before serving.
