Ingredients
  • 100 gram Butter
  • 75 gram Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 200 gram All-Purpose Flour
  • 0.25 teaspoon Salt
  • 0.5 cup Strawberry Jam
Instructions
  1. In a bowl, cream together the butter and powdered sugar until light and fluffy.
  2. Add the vanilla extract and mix well.
  3. In a separate bowl, whisk together the all-purpose flour and salt.
  4. Gradually add the flour mixture to the butter mixture, mixing until a dough forms.
  5. Divide the dough into two equal portions and shape into discs. Wrap in plastic wrap and refrigerate for 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Roll out one disc of dough on a lightly floured surface to about 1/4-inch thickness.
  8. Use a round cookie cutter to cut out cookies. Place half of the cookies on the prepared baking sheet.
  9. Spoon a small amount of strawberry jam onto the center of each cookie on the baking sheet.
  10. Roll out the second disc of dough and cut out cookies.
  11. Place the remaining cookies on top of the jam-filled cookies, pressing gently to form sandwiches.
  12. Bake for 10-12 minutes or until the edges are lightly golden.
  13. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  14. Serve and enjoy!
