Ingredients
  • 1.5 cup Milk
  • 1 piece Vanilla Bean
  • 4 unit Egg Yolks
  • 0.5 cup Granulated Sugar
  • 2 tablespoon Cornstarch
  • 2 tablespoon Unsalted Butter
Instructions
  1. In a saucepan, heat the milk and vanilla bean over medium heat until it simmers.
  2. In a mixing bowl, whisk together the egg yolks, granulated sugar, and cornstarch until well combined.
  3. Slowly pour the hot milk into the egg yolk mixture while whisking continuously.
  4. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  5. Remove from heat and stir in the unsalted butter until melted.
  6. Pour the pastry cream into a bowl and cover with plastic wrap, pressing the wrap directly onto the surface of the cream to prevent a skin from forming.
  7. Allow the pastry cream to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours before using.
