Ingredients
  • 2 pound Sweet Potatoes
  • 4 tablespoon Butter
  • 2 tablespoon Brown Sugar
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 1/4 cup Pecans
  • 1/4 cup Marshmallows
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
  4. Remove the sweet potatoes from the oven and let them cool for 10 minutes.
  5. Cut the sweet potatoes in half lengthwise and scoop out the flesh, leaving a thin layer of flesh on the skin.
  6. In a bowl, mash the sweet potato flesh with butter, brown sugar, cinnamon, and salt until well combined.
  7. Spoon the sweet potato mixture back into the potato skins.
  8. Top each sweet potato half with pecans and marshmallows.
  9. Place the sweet potatoes back in the oven and bake for an additional 10-15 minutes, or until the marshmallows are golden brown.
  10. Serve hot and enjoy!
