Ingredients
  • 2 pound Potatoes
  • 1 cup Sour cream
  • 4 tablespoon Butter
  • 1 cup Cheddar cheese, shredded
  • 1/4 cup Green onions, chopped
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 6 slices Bacon, cooked and crumbled
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Scrub the potatoes, pierce them with a fork, and bake for 45-50 minutes or until tender.
  3. Allow the potatoes to cool slightly, then cut them in half lengthwise.
  4. Scoop out the potato flesh, leaving a thin shell.
  5. In a bowl, mash the potato flesh with sour cream, butter, cheddar cheese, green onions, salt, and black pepper.
  6. Spoon the mixture back into the potato shells and place them in a baking dish.
  7. Top each potato with crumbled bacon.
  8. Bake for an additional 15-20 minutes or until heated through and the cheese is melted.
