Ingredients
  • 2 can Tomatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 2 cup Vegetable Stock
  • 1 cup Heavy Cream
  • 2 tablespoon Butter
  • 4 slice Bread
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the bread into cubes and toss with olive oil, salt, and black pepper.
  3. Spread the bread cubes on a baking sheet and bake for 10-12 minutes until golden brown. Set aside.
  4. In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  5. Add the canned tomatoes and vegetable stock to the pot. Bring to a simmer and let it cook for 20 minutes.
  6. Use an immersion blender or transfer the mixture to a blender to puree until smooth.
  7. Return the soup to the pot and stir in the heavy cream. Cook for another 5 minutes.
  8. Season with salt and black pepper to taste.
  9. Serve the tomato bisque with garlic croutons on top.
