Ingredients
  • 200 gram Carrots
  • 300 gram Potatoes
  • 150 gram Onions
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 teaspoon Curry powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 20 gram Fresh coriander
Instructions
  1. Peel and chop the carrots, potatoes, and onions.
  2. In a large pot, bring the vegetable broth to a boil.
  3. Add the chopped vegetables to the pot and simmer for 20 minutes or until tender.
  4. In a separate small pot, heat the coconut milk over low heat.
  5. Stir in the curry powder, salt, and black pepper.
  6. Pour the coconut milk mixture into the large pot with the vegetables.
  7. Use an immersion blender to blend the soup until smooth.
  8. Simmer for another 5 minutes.
  9. Serve hot, garnished with fresh coriander.
