Ingredients
  • 1 can Kidney beans
  • 1 can Black beans
  • 1 can Cannellini beans
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Red bell pepper
  • 1 cup Corn kernels
  • 1 cup Tomato sauce
  • 2 tablespoon Dijon mustard
  • 2 tablespoon Maple syrup
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 1 cup Cheddar cheese
  • 2 tablespoon Fresh cilantro
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
  3. Add the beans, corn, tomato sauce, Dijon mustard, maple syrup, paprika, cumin, salt, and black pepper to the skillet. Stir well to combine.
  4. Transfer the mixture to a casserole dish and spread it evenly.
  5. Sprinkle cheddar cheese on top.
  6. Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it rest for 10 minutes.
  8. Garnish with fresh cilantro before serving.
