Ingredients
  • 0.5 cup Butter
  • 1 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Peppermint extract
  • 1.25 cup All-purpose flour
  • 0.5 cup Cocoa powder
  • 0.25 teaspoon Salt
  • 1 cup Semi-sweet chocolate chips
  • 1 teaspoon Vegetable oil
Instructions
  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Add the vanilla extract and peppermint extract, and mix well.
  3. In a separate bowl, whisk together the flour, cocoa powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. Divide the dough in half and shape each half into a log. Wrap in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Slice the dough into 1/4-inch thick rounds and place on the prepared baking sheet.
  8. Bake for 10-12 minutes, or until the edges are set.
  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 30-second intervals, stirring until smooth.
  11. Dip each cookie into the melted chocolate, coating both sides.
  12. Place the cookies on a parchment-lined baking sheet and refrigerate for 15 minutes, or until the chocolate is set.
