Ingredients
  • 1 cup Peanut Butter
  • 1.5 cup Powdered Sugar
  • 2 tablespoon Butter
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 teaspoon Coconut Oil
Instructions
  1. In a bowl, mix together peanut butter, powdered sugar, butter, vanilla extract, and salt until well combined.
  2. Roll the mixture into small balls and place them on a parchment-lined baking sheet.
  3. Flatten each ball slightly with your thumb or the back of a spoon.
  4. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring in between, until smooth.
  5. Spoon the melted chocolate over each peanut butter disc, covering them completely.
  6. Place the baking sheet in the refrigerator and let the peanut butter cups set for about 1 hour.
  7. Once set, remove from the refrigerator and enjoy!
