Ingredients
  • 4 piece Bell peppers
  • 1 cup Black beans
  • 1 cup Corn kernels
  • 1 cup Cooked rice
  • 1 cup Salsa
  • 1 cup Shredded cheese
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Lime juice
  • 4 tablespoon Sour cream
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine black beans, corn kernels, cooked rice, salsa, shredded cheese, cumin, chili powder, salt, fresh cilantro, and lime juice.
  4. Stuff the bell peppers with the mixture and place them in a baking dish.
  5. Bake for 30-35 minutes, or until the peppers are tender and the filling is heated through.
  6. Remove from the oven and let them rest for 10 minutes.
  7. Serve the stuffed peppers with a dollop of sour cream on top.
  8. Enjoy!
