Ingredients
  • 2 cup Basmati Rice
  • 2 cup Spinach
  • 1 cup Plain Yogurt
  • 2 large Eggs
  • 1 medium Onion
  • 1 teaspoon Turmeric
  • 1 pinch Saffron
  • 2 tablespoon Vegetable Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Cook the rice and set aside.
  2. Sauté the chopped onion in vegetable oil until golden.
  3. Add spinach, turmeric, salt, and black pepper to the onion mixture and cook until spinach wilts.
  4. In a separate bowl, mix yogurt, eggs, saffron, salt, and black pepper.
  5. Grease a baking dish and layer the rice, spinach mixture, and yogurt mixture.
  6. Cover the dish with foil and bake at 350°F for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes until the top is golden.
  8. Let it rest for 10 minutes before flipping the dish onto a serving platter.
