Ingredients
  • 2 pound Sweet Potatoes
  • 4 tablespoon Butter
  • 1 cup Brown Sugar
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1 cup Mini Marshmallows
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes.
  3. Boil the sweet potatoes until tender, then drain.
  4. In a large mixing bowl, mash the sweet potatoes.
  5. Add butter, brown sugar, cinnamon, nutmeg, salt, and vanilla extract to the mashed sweet potatoes. Mix well.
  6. Transfer the sweet potato mixture to a greased casserole dish.
  7. Top with mini marshmallows.
  8. Bake for 30-35 minutes, or until the marshmallows are golden brown.
