Ingredients
  • 2 pound Sweet Potatoes
  • 4 tablespoon Butter
  • 1 cup Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1/2 teaspoon Salt
  • 2 large Eggs
  • 1/2 cup Evaporated Milk
  • 1/2 cup Pecans
  • 1/2 cup Marshmallows
  • 1 9-inch Pie Crust
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes.
  3. In a large pot, boil the sweet potatoes until tender.
  4. Drain the sweet potatoes and transfer them to a large bowl.
  5. Mash the sweet potatoes with butter, brown sugar, vanilla extract, cinnamon, nutmeg, and salt.
  6. In a separate bowl, whisk together eggs and evaporated milk.
  7. Add the egg mixture to the sweet potato mixture and mix well.
  8. Pour the mixture into the pie crust.
  9. Bake for 30 minutes.
  10. Remove the tart from the oven and sprinkle pecans and marshmallows on top.
  11. Return the tart to the oven and bake for an additional 15 minutes, or until the marshmallows are golden brown.
  12. Let the tart cool for 15 minutes before serving.
