  2. Wash and peel the sweet potatoes. Cut them into bite-sized cubes.
  3. In a bowl, toss the sweet potatoes with olive oil, salt, and cinnamon.
  4. Spread the sweet potatoes in a single layer on a baking sheet.
  5. Bake for 20-25 minutes or until tender and slightly caramelized.
  6. In the meantime, heat a non-stick pan over medium heat.
  7. Add the walnuts, brown sugar, and maple syrup to the pan.
  8. Cook, stirring constantly, until the walnuts are caramelized and coated with the sugar syrup.
  9. Remove the sweet potatoes from the oven and let them cool for a few minutes.
  10. Mix the caramelized walnuts with the roasted sweet potatoes.
  11. Serve as a snack or appetizer.
