Ingredients
  • 2 pound Sweet potatoes
  • 1 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1/2 cup Unsalted butter
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg
  • 1/4 teaspoon Salt
  • 1/2 cup Chopped pecans
  • 1/2 cup Whipped cream
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, boil the sweet potatoes until fork-tender. Drain and let cool.
  3. In a mixing bowl, combine the cooked sweet potatoes, flour, sugar, butter, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined.
  4. Pour the mixture into a greased baking dish and sprinkle with chopped pecans.
  5. Bake for 40-45 minutes or until the edges are golden brown.
  6. Remove from the oven and let cool for 30 minutes.
  7. Cut into bars and serve with whipped cream on top.
