Ingredients
  • 500 gram Sweet potatoes
  • 1 medium Onion
  • 2 large Eggs
  • 1/4 cup All-purpose flour
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1/4 cup Vegetable oil
Instructions
  1. Grate the sweet potatoes and onion using a box grater.
  2. Squeeze out any excess moisture from the grated sweet potatoes and onion.
  3. In a large bowl, combine the grated sweet potatoes, onion, eggs, flour, salt, and pepper. Mix well.
  4. Heat vegetable oil in a large skillet over medium heat.
  5. Drop spoonfuls of the sweet potato mixture into the skillet and flatten with a spatula.
  6. Cook for 3-4 minutes on each side, until golden brown and crispy.
  7. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
  8. Serve the sweet potato latkes hot with sour cream or applesauce.
