Peel and grate the sweet potatoes and onion.

Heat vegetable oil in a large skillet over medium-high heat.

Scoop about 1/4 cup of the sweet potato mixture and flatten it into a pancake shape.

Carefully place the pancake in the hot oil and cook for about 3-4 minutes on each side, until golden brown and crispy.

Remove the latkes from the skillet and place them on a paper towel-lined plate to drain excess oil.

Repeat the process with the remaining sweet potato mixture.
