  4. Scoop about 1/4 cup of the sweet potato mixture and flatten it into a pancake shape.
  5. Carefully place the pancake in the hot oil and cook for about 3-4 minutes on each side, until golden brown and crispy.
  6. Remove the latkes from the skillet and place them on a paper towel-lined plate to drain excess oil.
  7. Repeat the process with the remaining sweet potato mixture.
  8. Serve the sweet potato latkes hot with applesauce or sour cream.
