Ingredients
  • 500 gram Sweet potatoes
  • 50 gram Butter
  • 50 gram All-purpose flour
  • 200 milliliter Milk
  • 100 gram Breadcrumbs
  • 200 milliliter Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 10 gram Parsley
Instructions
  1. Boil the sweet potatoes until tender. Peel and mash them.
  2. In a pan, melt the butter over medium heat. Add the flour and cook for 1 minute, stirring constantly.
  3. Gradually add the milk, stirring continuously until the mixture thickens.
  4. Add the mashed sweet potatoes, salt, and pepper. Mix well and let it cool.
  5. Shape the mixture into croquettes and coat them with breadcrumbs.
  6. Heat the vegetable oil in a frying pan. Fry the croquettes until golden brown.
  7. Drain on paper towels and sprinkle with parsley.
  8. Serve hot and enjoy!
