Ingredients
  • 500 gram Sweet potatoes
  • 150 gram Feta cheese
  • 120 gram All-purpose flour
  • 2 teaspoon Baking powder
  • 2 unit Eggs
  • 1/2 cup Milk
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Peel and grate the sweet potatoes.
  2. In a large bowl, combine the grated sweet potatoes, crumbled feta cheese, all-purpose flour, baking powder, eggs, milk, salt, and black pepper. Mix well until all ingredients are combined.
  3. Heat olive oil in a large non-stick skillet over medium heat.
  4. Spoon the sweet potato mixture onto the skillet, forming small pancakes. Cook for 3-4 minutes on each side, or until golden brown.
  5. Remove the pancakes from the skillet and serve hot.
