Ingredients
  • 100 gram Butter
  • 120 gram Granulated sugar
  • 1 tablespoon Molasses
  • 1 unit Egg
  • 250 gram All-purpose flour
  • 2 teaspoon Ground ginger
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 50 gram Crystallized ginger, chopped
  • 50 gram Granulated sugar (for rolling)
Instructions
  1. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  2. Add the molasses and egg, and mix well.
  3. In a separate bowl, whisk together the flour, ground ginger, ground cinnamon, baking soda, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
  5. Stir in the chopped crystallized ginger.
  6. Cover the dough and refrigerate for 30 minutes.
  7. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Roll the dough into 1-inch balls, then roll each ball in granulated sugar to coat.
  9. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes, or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
