Swedish Ginger Cookies, also known as ‘pepparkakor’, are a traditional Swedish Christmas cookie often enjoyed with glögg, a mulled wine.

  2. Add the molasses and egg, and mix until well combined.
  3. In a separate bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Divide the dough in half and shape each half into a log.
  6. Wrap the logs in plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Slice the chilled dough logs into 1/4-inch thick rounds and place them on the prepared baking sheet.
  9. Bake for 8-10 minutes, or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
